like to see the option -- as a pull down in the compose window -- to specify a message's 'priority', defaulting to 'normal'.

use case:

many of the projects i work on have established communication rules, based in part on the priority. e.g., if it's HIGH priority and FROM the boss, 'drop everything now!' etc etc

The problem there is that priority is not a standardised concept. There is no official header for it. Cyrus' suggestion for this has been to use identities with custom headers. You could make yourself an identity that inserts your company's preferred priority header.
